Ingredients

2 cups organic rolled oats

1 cup coconut flakes

1 cup puffed quinoa (optional, but a great addition!)

1 cup goji berries

1 cup pumpkin seeds

1 cup assorted seeds such as chia, flax, sesame

½ cup almonds

½ cup maple syrup

½ cup melted coconut oil

¼ cup blackstrap molasses

The juice from one orange

A sprinkle of sea salt

Preparation

Preheat the oven to 375℉ (190℃).

In a large bowl, combine all the dry ingredients until well mixed. Then pour over the molasses, maple syrup, coconut oil, orange juice and sprinkle over the sea salt. Stir everything until it’s all coated.

Pour the granola onto a baking tray lined with parchment paper and use the back of a spoon to flatten it all down. Bake in the oven for about 20 minutes. Keep an eye on the granola. You want it to get golden brown but not to burn!

When the granola is ready, take it out from the oven, place it on the counter to cool but don’t touch it. Allowing it to set will ensure you get some nice big granola clusters.

After about 10 minutes use a spoon to gently move around the granola. Pour into a glass jar and enjoy this healthy breakfast for weeks to come!
