Parchment paper: 6″ round of paper

Ingredients

*2 fresh peaches, peeled and cut into wedges

2 tbsp. (30 ml) softened butter

¼ cup (60 ml) brown sugar

Grated nutmeg to taste

1 egg

¼ cup (60 ml) sugar

¼ cup (60 ml) milk

1 tbsp. (15 ml) melted butter

½ cup (125 ml) unbleached flour

1 tsp. (5 ml) baking powder

Preparation

Preheat oven to 375°F (190°C).

Line a 6-in. (15½ cm) round baking pan with Kana parchment paper.

In a bowl, mix soft butter and brown sugar together, spread over bottom of pan and grate in a little nutmeg.

Place the peeled peach quarters on the butter and brown sugar mixture.

In a bowl, beat egg and gradually add sugar, milk, melted butter, baking powder, and sifted flour. Mix well until batter is smooth.

Pour batter over peaches.

Bake 30 minutes.

Let cool for 10 minutes, then turn the pan over onto a serving plate.

Note: *You can also use canned peaches if you do not have fresh peaches on hand.
